The story

Hi everyone,

Today we’re in Barcelona!

Me and Lina decided to spend our holiday here, and of course we wanted to do a linked meals episode while we’re here. We reached out to a group on Facebook called ‘Swedes in Barcelona’ and a girl named Linn wanted us to come to her place, so she could cook us a taco pie. You can’t say no to that, right?

Linn has lived here in Barcelona for 12 years now, which is why she feels that Barcelona is her home. It was the curiosity to learn Spanish that led her here, and the love for both the weather and this metropolitan city that made her stay. She works as a hairstylist and makeup artist and the funny thing is that our friend that we are staying with while we’re here (he’s a model and actor), Linn has done his makeup and hair for a photoshoot a while ago. How crazy is that? The world is so small.

This was the sweatiest episode we’ve ever had so far, just watch the video and you will see. 

About the food

I really liked the taco pie – I had three servings, oops. It was also fun that she used lentils instead of soy protein.

I have cooked it 3 times already, each time with different lentils. The first time I tried it with red lentils, the second with green lentils and the third one with brown lentils. The consistency differs a bit between which lentil you are using, you need to add a bit more water to the red one because it absorbs more water than the green one. The final results is just as delicious though, regardless which lentils you use!

The recipe (taco pie)

Ingredients

4-5 persons

Pie crust:
125 g butter
0,6 cups flour
0,6 cups whole wheat flour
3 tbsp water
1 tsp paprika powder

The filling:
1 cup lentils of free color, uncooked
1 onion, chopped
1 clove of garlic
400 g canned tomatoes
1,5 tbsp cumin
Cayenne pepper
1 tsp curry
Salt
Pepper

1 cup creme fraiche
Fresh coriander, chopped
2-3 tomatoes, chopped
1 green paprika, sliced
Cheese

How to

About the which lentils you should use:
I think the pie is good no matter which lens you use, so use the one you find in the store or in your pantry. In the original recipe, Linn uses gray lenses, but since I can’t find them here in Gothenburg I have tried to make the recipe with both green, red and brown lenses. Everything is just as good!

The crust:
Set the oven to 220 degrees Celsius (hot air 200 degrees).

Slice the butter into smaller pieces. Combine butter and flour with a fork or your fingers until well combined. Add water and paprika powder, and stir until smooth. Press it into a pie pan, approximately 15x25 cm in size. Use a fork to poke some holes in the crust.

Pre-bake the crust for about 10 minutes.

The filling:
Rinse the lenses thoroughly and pre-boil them for 5-10 minutes.

Fry onion and garlic until soft. Add the pre-boiled lentils, the canned tomates and all the spices except the coriander. Let it simmer for 10-15 minutes until the lentils are soft (the cooking time may vary depending on the color of the lenses you use, add a little more water if you notice that all the liquid boils off).

Pour the filling into the crust and spread a layer of crème fraiche on top of it. Cover it with coriander, tomatoes and paprika, and most importantly – the cheese.

Bake the pie in the middle of the oven for about 20 minutes, until the cheese is golden.

Ingredienser

4-5 personer

Pajskalet:
125 g smör
1,5 dl vetemjöl
1,5 dl grahamsmjöl
3 msk vatten
1 tsk paprikapulver

Pajfyllningen:
2 dl torra, okokta linser av valfri färg
1 gul lök, hackad
1 vitlöksklyfta
1 burk krossade tomater á 400 g
1,5 msk spiskummin
Cayennepeppar
1 tsk curry
2 krm salt
Svartpeppar

2 dl crème fraiche
Färsk koriander, hackad
2-3 tomater, hackade
1 grön paprika, skivad
Ost

Så här gör du

Angående valet av linser:
Jag tycker att pajen är god oavsett vilken lins man använder, så använd den som du hittar i affären eller i ditt skafferi. I originalreceptet så använder Linn gråa linser, men eftersom jag inte kan hitta dem här i Göteborg så har jag provat att göra receptet med både gröna, röda och bruna linser. Allt blir lika gott!

Pajskalet:
Sätt ugnen på 225 grader (200 vid varmluftsugn).

Skär smöret i små bitar. Nyp ihop smör och mjöl till en smulig massa. Tillsätt vattnet och paprikapulvret och blanda ihop degen till en deg. Tryck ut degen i en ugnsform som är ca 15x25 cm. Nagga botten med en gaffel.

Förgrädda pajskalet i ca 10 minuter.

Pajfyllningen:
Skölj av linserna ordentligt och förkoka dem i vatten i ca 5-10 minuter.

Stek gul lök och vitlök mjuka. Tillsätt de förkokta linserna, de krossade tomaterna samt alla kryddor förutom koriandern. Låt koka i ca 10-15 minuter tills linserna är mjuka (koktiden kan variera beroende på vilken färg på linserna du använder, tillsätt lite mer vatten om du märker att all vätska kokar bort).

Fyll pajskalet med linsröran och bred på crème fraichen. Täck med koriander, tomat samt grön paprika, och sist men inte minst – osten.

Grädda pajen i mitten av ugnen i ca 20 minuter, tills osten har fått fin färg.
